Ruby's Belizean Red Beans
 
Ingredients
 
Serves Five
Eight ounces red kidney beans
Twenty eight cups water
Two stalks celery
One red bell pepper
Eight garlic cloves
One teaspoon pepper
One teaspoon garlic powder
One teaspoon ground rosemary
One teaspoon thyme
One teaspoon garlic salt
One teaspoon rubbed sage
One tablespoop salt + more to taste
One small white onion
One tablespoon unsalted butter
Two tablespoons extra virgin olive oil
Wash the kidney beans. Cut the celery stalks lengthwise in half and chop into medium size pieces. Chop the bell pepper into small pieces. Mince the onion and garlic.
Place the beans in a large pot with twenty cups of water. Add the celery, bell pepper, minced garlic and all of the spices and oil. Cook uncovered on a high heat for one hour fifteen minutes. Cover, add the remaining water and let cook for about one hour or until slightly thickened. Turn off the heat, remove the cover, stir, and let sit.
In a separate pan, cook the onion and butter on a medium heat for seven minutes or until golden brown. Add the onion to the bean mixture. Cook uncovered for about forty minutes, or until the beans have thickened. Season to taste with salt.
Serve over rice or in a tortilla.
